Sausage Tagliatelle
Quick to make and one the whole family should enjoy.
Take about 20 minutes and serves 4.
To make this recipe you will need:
- 20g unsalted butter
- olive oil for drizzling
- 500g sausagemeat
- 350g chestnut mushrooms sliced
- 1 tsp sweet smoked paprika
- 300ml soured cream
- ½ tbsp wholegrain mustard
- 150ml beef stock
- 400g dried tagliatelle
- large handful grated cheese - cheddar or parmesan
- small bunch parsley chopped (optional)
And here’s how to do it…
Heat the oil and butter in a frying pan until foaming. Roll the sausagemeat in to small balls and cook for 5-8 minutes until golden brown all over. Add the mushrooms and cook for a further 5 minutes. Stir through the paprika and cook for a minute then add the soured cream, mustard and stock. Bring to a simmer and season to taste.
Cook the pasta according to the packet instructions while the meat balls are simmering in the sauce. Drain well, then pour over the sauce, add the parsley if using and mix together with a good handful of grated cheese.
