Tor's Homemade Cornish Fish Finger Recipe
A tried and tested, super easy recipe that is guaranteed to fill tummies big and small.
This has been a firm family favourite for years. Its easy, cheap and a recipe that the kids can easily help with and get involved with making the family meals. Ultimately is there anything better than a fish finger sandwich??
To make this recipe you will need:
- 300g Cornish Diced White Fish OR any other fillets of fish you like really!
- A couple of large St Ewe Eggs, beaten.
- Some plain flour - I use anything we have in the back of the cupboard
- Some breadcrumbs - blitz up any stale bread into crumbs.
- Some nice bread rolls - we love Da Bara Ciabatta Rolls
- Potatoes for handcut chips
- Any salad bits you want to add into the fish finger burger
- Mayonnaise, Cornish Ketchup etc
- Vegetable Oil for shallow frying
- Small Knob of Salted Butter
And here’s how to do it…
1.Lightly salt the fish, cover and leave for 20 minutes, then pat dry with kitchen paper. Cut against the grain of the flakes into chunky fingers of your desired size. Cut the fish into whatever shape you like - they don't have to be uniform!
2. Cover with flour and shake off the excess
3. Dunk in the beaten egg until coated.
4. Then cover with breadcrumbs.
5. Set aside until all the fish is bread crumbed.
This is the bit the kids love!!
6. Cut your potatoes into whatever size chips you like, season with salt and pepper and oil - bung in the oven for 30 minutes at about 190 degrees or put in the air fryer if you have one (I don't!!) Keep an eye on them and give them a shake every now and again!
7. Pour enough oil into a wide frying pan to just cover the base, and put on a medium to high heat until shimmering. Add the fish fingers and cook for about two to three minutes until golden, then turn and do the same on the other side. Just before they’re ready, add the butter and swirl the pan to melt.
8. Remember if you are doing batches of them - you don't want the oil too hot otherwise the breadcrumbs will burn.
9. Drain the fish fingers on kitchen paper and serve immediately in the ciabatta rolls with salad, mayo, ketchup - however you like them really!
My only advice is that one rolls is NEVER EVER enough according to my kids who would happily tuck into 4 if they were allowed.
